These Blueberry Oat Bites are perfect for a quick snack and they taste amazing!!! 😋
Here in the midwest, we often are limited to many fresh and seasonal fruits and vegetables. But blueberries are usually available all year round - but the best supply and price is available during the summer.
These no-bake blueberry oat bites are great for snacks, quick breakfast or even for traveling. They are soft yet chewy with all the taste and sweetness of fresh blueberries, full of rich in antioxidants and fiber.
1/2 cup no salt added chickpeas, rinsed and drained
INSTRUCTIONS
In a food processor, combine all ingredients and blend until full mixed.
Form into 10 bite-sized balls and store in the freezer or fridge. (You can put them in the freezer for a couple of minutes, they worked really well to roll up.)
These bites are:
vegan
gluten-free
no added sugar
nut-free
full of fiber and antioxidants
full of plant-based protein from the chickpeas
Substitutions:
Add peanut butter instead of almond butter
Swap the blueberries for mini chocolate chips. You can do about 1/4- 1/3 cup of chocolate chips.
You can also try dried cranberries or dried apricots instead of blueberries.
Use vanilla almond butter and leave out the honey!
