Looking for something sweet & juicy for dinner?
This is a super easy Hawaiian Chicken recipe that can be quickly thrown in the crockpot and be ready for the family by dinnertime. Plus, it's great as leftovers or meal prep for the week.
Ingredients
- 4 boneless chicken breasts
- 1 (8 ounce) can of pineapple chunks with juice
- 3 tablespoons honey
- 2 tablespoon soy sauce
- ½ cup dark brown sugar
- 1 tsp pepper flakes
- 1 tb ground ginger
- 1 red paper cut in 1/2 inch pieces
- 2 cups rice

Directions
Place chicken breasts into the bottom of a slow cooker. Pour pineapple chunks with juice over the chicken.

Drizzle with honey and soy sauce and sprinkle with brown sugar and ginger.

Set the
crockpot (
slowcooker) on low and cook for 6 hours
OR, you can cook on HIGH for 2 hours and then reduce the setting to LOW and cook until chicken is cooked through, moist, and tender, about 4 more hours

Reduce setting to Low and cook until chicken is cooked through, moist, and tender, about 6 more hours.

In a separate
frying pan, brown 1 cut-up pepper and 1 can of pineapple per your taste (or steam cook them separately to add in at the end before serving)

Shred chicken and serve over rice.

And yes, before you say anything, I know it looks a bit "seasonless", but I assure you it is flavorful. With the soy sauce, brown sugar, honey, pineapple juice and spicy flakes, this is a sweet and savory flavorful dish. And it's great for leftovers or meal prep!
But I add salt and pepper to it as well once it's plated.
